The Traditional Crab Cake

Lenni's Crab Mix, Crab CAke

This traditional favorite is quick to make and delicious.  Ready to cook right out of the container, simply use Lenni's Maryland Style Crab Mix.  Create 3 to 4 oz patties and either bake (425 degrees for 8-10 minutes), deep-fry (350 degrees for 90 seconds) or saute in olive oil until both sides have browned.  




Baked Mini Peppers with Crabmeat Stuffing

Slice away a piece of pepper to create an opening to the cavity of the pepper. Blanche peppers till just tender , shock peppers in an ice bath to stop cooking. Blot dry and stuff with Lenni's Crab Mix™, about 1 Tblsp per pepper. Drizzle with melted butter and add a little water to the bottom of the pan. Bake at 350° for about 15-18 minutes or until browned. Serve with queso sauce, salsa, ranch dressing or just enjoy alone.  Can also be topped with cheese.

Baked Stuffed Artichoke

Prep artichoke by cutting off the the ends of the leaves with scissors. Cut across the top at about 2 inches down and rub with lemon. Drop into salted water with lemon and cook until a wooden skewer pierces easily through the center of the bottom of the artichoke. Place in an ice bath to chill down and stop the cooking . Remove and squeeze water out. Carefully pull back each leaf and place Lenni's Crab Mix™ behind it. Drizzle lemon and melted butter over artichoke and bake in 350° oven for about 20 minutes or until nicely

Stuffed Mushrooms


Wipe the mushrooms clean with a damp towel. Remove stems. Spoon out the gills and the base of the stem, making deep cups. Discard gills and stems. Fill the mushroom caps with rounded teaspoonfuls of your favorite Lenni's Crabmix filling, and place them in an ungreased shallow baking dish. Sprinkle tops with Parmesan and paprika.  Bake for 15 minute at 350 degrees.
